Ingredients
- 2 cups of green lentils
- 1 ½ cups of carrots
- 1 small onion
- 1 clove of garlic
- 1/2 cup of mushrooms
- 1/2 cup of rice flour
- 2 eggs
- 1 ½ tablespoon of parmesan
- 1/2 teaspoon of salt
- a pinch of black pepper
- 3 tablespoons of tomato sauce
- 1/2 teaspoon of salt
- 2 tablespoons of Greek yogurt
Instructions
- Boil lentils until tender in unsalted water, no pre-soaking
- Finely grate carrots
- Finely chop the onion and garlic and mushrooms
- Place all ingredients with a stick blender and blend until all is formed in a smooth paste
- Pre-heat a non-stick pan with 1 tablespoon of olive oil to medium heat
- When hot, use a spoon to make patties in a circular motion
- Flip and shallow fry the other side

Notes
Use a stick blender to prepare the ‘meat dough’ as it’s must faster, cleaner and you get a better result.
